QUID, an abbreviation for Quantitative Ingredient Declaration, holds substantial significance in food labeling, as it allows for highlighting the presence or absence of certain ingredients, aiding consumers in making informed choices about what they eat to stay healthy. The Food Safety Authority of Ireland has elaborated on some guidelines regarding the inclusion of QUID in food labels. Let’s have a look.

What is QUID in Food Labeling?

The concept of QUID refers to the declaration of the quantity, typically in percentage terms, of an ingredient or a category of ingredients used in the production or preparation of a food item. This requirement applies to all food products, including beverages, encompassing those exempt from regular ingredients listing unless specifically excluded.

Purpose of QUID

In today’s consumer-driven market, transparency and clarity in product labeling are pivotal in building trust between consumers and food manufacturers. By incorporating QUID in food labels it serves to perform the following objectives:

  • Consumer Information: Empowering consumers with accurate and meaningful information about consumed ingredients, QUID enable informed choices that match dietary preferences, health needs, or specific ingredient concerns, aligning with their preferences and health requirements.
  • Preventing Misleading Claims: QUID helps prevent misleading advertising or labeling practices where a product might be marketed based on a particular ingredient, but that ingredient constitutes a minimal proportion of the product.
  • Comparability and Differentiation: QUID facilitates effective product comparison by revealing the relative quantities of emphasized ingredients. This aids in distinguishing between products with varying ingredient compositions, assisting individuals in finding options that best meet their needs and preferences.
  • Allergen Management: By clearly defining the compositional information of particular allergens present in the food, individuals with food allergies or sensitivities can easily identify and compare the quantitative presence of allergenic ingredients, which is critical for making safe food choices.

Application of QUID

QUID is applied in the following scenarios:

  • In the Name or Next to the Name of the Food: When an ingredient is part of the food’s name, e.g., ‘ham and mushroom pizza,’ or closely associated with it, the percentages must be provided alongside the ingredient list.
  • Emphasized Ingredients: Ingredients highlighted through words, images, or graphics requiring quantification, like ‘with butter.’
  • Distinguishing Factors: Ingredients crucial for distinguishing similar products due to variations, such as marzipan composition among different regions.

However, there are exceptions when QUID doesn’t apply:

  • Solid-in-Liquid Medium: When solid food exists within a liquid medium (e.g., kidney beans in salt water), stating drained net weight suffices.
  • Existing Legislation: Instances where other regulations already demand specific ingredient quantity declarations (e.g., fruit content in fruit nectar).
  • Flavoring Purposes: Ingredients used solely for flavoring in small quantities (e.g., garlic in garlic bread).
  • Minor to No Influence: Ingredients present in such minute quantities that they don’t affect consumer purchasing decisions (e.g., malt whiskey).

Calculation of QUID

QUID is calculated depending on the recipe at the mixing bowl stage. It involves dividing the weight of the ingredient to be declared by the total weight of all ingredients, then multiplying by 100 to determine the percentage. However, adjustments are made for changes like moisture loss during cooking.

Dealing with Values Exceeding 100%: If the calculated QUID exceeds 100% due to processing alterations (e.g., water loss), a declaration is made based on the weight of the ingredient used to prepare 100g of the finished product.

Concentrated or Dehydrated Products: For ingredients used in concentrated or dehydrated forms, their quantities may be indicated based on their proportions before concentration or dehydration. This applies especially in cases where reconstitution occurs during manufacturing.

Labeling the QUID Value: The declared QUID value is an average quantity considering manufacturing variations. It should be rounded to the nearest whole number or, if below 5%, to the nearest 0.5 decimal place.

Regulatory Compliance: Staying compliant with evolving regulations can be complex. Technology can aid in automating compliance checks and updates, ensuring that labels consistently adhere to the latest labeling requirements.
